Ingredient | Amount |

Parsley (or cilantro) | 1/2 unit |
Avocado | 1/2 unit |
Quinoa | 70 g |
Lemon juice | 1 tbsp |
Tomato | 1/2 unit |
Bell pepper | 1/2 unit |
Cook the quinoa in salted water using a 1:2 ratio (quinoa to water).
Meanwhile, dice the avocado, 1/4 of a bell pepper, and the tomato (or use 3 cherry tomatoes).
Chop the herbs, season with salt, and drizzle with lemon juice.
