Cover quinoa with water so it sits 1 cm above the grains. Cook on low, covered, until water evaporates. Rest for 5–10 minutes.

Cut cucumber into thin strips (you can replace cucumber with salmon or shrimp).

Place the nori sheet rough side up. With wet hands spread quinoa in an even layer, leaving 2 cm free on one edge.

Place the filling (vegetables/cheese/avocado) in the center.

Roll tightly.
